Maxine's.....gone, but their chicken salad won't be forgotten

Maxine's Cafe & Bakery on Green River Road was one of my favorite lunch spots in the Tri-State, so I was very bummed when I found out they were closing after 24 years.  The economy and increased competition were just a couple of reasons the owners decided to pull the plug.  It was a cute place with wonderful, homemade food, and I will dearly miss it. 

So, I tried to re-create their curried chicken salad....since it was my absolute favorite.  Here's the recipe I came up with:

3 boneless, skinless chicken breats

3 stalks celery, chopped

Fun Things To Do This Weekend

You can tell we're getting into the Holiday Movie season, because we have some big new releases this weekend.

What's Happening This Weekend

There's some cool stuff going on this weekend across the Tri-State.  Our Extortion  Breakfast guests, The Evansville Lapidary Society will host their big fundraising rock show and sale Saturday and Sunday at Washington Square Mall. The hours are Saturday from 10 a.m. until 5 p.m., and Sunday Noon until 5 p.m.

A fun afternoon with the kids happens on Sunday at the Centre, when Disney: Live! hits the stage at the Aiken Theare.

Now this sounds like a good time!

We had Beth Tromley and Joanne Zeller in this morning to talk about Riding Hope, which has equestrain therapy for special needs children ages 2-18.

They're having a Western-themed Hoedown this Saturday night at the St. Wendel Knights of St. John from 5-11 p.m. Admission is $30 per person, or $50 per couple and includes food and drink! This a major fundraiser for Riding Hope so they can expand and help more kids.

Diane’s Team—Day 2 of Fall Festival Booth Reviews

**Booth 67-- (St. Peter’s UMC) (Deep Fried Mashed Potato Balls) OMG!!!!!!! These are absolutely fabulous and a unamimous choice by the entire team; they are spectacular and very original. They are mashed potatoes around chopped bacon, onion and cheese, then deep fried to perfection! Served with ranch or horseradish or enjoy them by themselves!

2012 Fall Festival--Diane's Team (Day 1 Booth Reviews)

Diane's team hit Franklin Street yesterday to begin the task of tasting every booth and make our recommendations. Here are the reults from Day 1:

 

Booth 46—Evansville Lutheran School (Smoked Turkey Leg) Big and juicy, it’s a Franklin Street staple, but it was left off the munchies map this year.

Booth 47—Evansville Racing Pigeon Club (Chili-Cheese Hot Tamale) This is a new item this year, and it was delicious.
